Pistachio

Pistachio (Pistacia vera), a small tree belonging to the terebinth family and native to western Asia, but now largely cultivated in southern Europe for the sake of its edible seeds. It has pinnate leaves of three or five leaflets, clusters of small apetalous unisexual flowers, and oval drupaceous fruits nearly an inch long, containing the bright green kernel. These kernels are largely eaten by Turks and Greeks, and now enter into French and even English confectionery.
