Laver

Laver, a condiment obtained either from the common red seaweed, Porphyra vulgaris, or from the allied green species, Ulva La'ctuca and U. latissima, which are even more common upon our coasts. The seaweed is heated with stock and lemon juice, and is eaten as a sauce with roast mutton, its strong flavour of iodine being much relished by the initiated.
